Getting a catering order on the table takes a little planning — here's how much runway we need for each size, so you're not scrambling the morning of your event.
Party Set of 4
Twenty-four hours is all we need for a Party Set. Order by the same time the day before and Clarisse will have four fresh minis boxed and ready. Great for a small office birthday, a last-minute host gift, or anytime you need something that looks like you planned ahead.
Catering Pan
A full Catering Pan — the quarter-sheet that serves 8 to 16 depending on whether you're going sweet or savory — needs 48 hours. That gives us time to bake a full pan fresh rather than pulling something from the case. If you're ordering a Chicken Pot Pie pan for a Thursday lunch, Tuesday morning is your deadline.
Corporate Spread
Corporate Spreads (three to eight pans, custom mix, optional on-site setup) need 5 business days. Paul uses that time to confirm your headcount and sweet/savory split, source what he needs, and coordinate with the kitchen. If you're eyeing the on-site setup add-on — where Paul or Elliot drives out, arranges everything, and comes back to clean up — that's all folded into the same window.
When you reach out, Paul's first question will be your headcount, your event date, and whether you want delivery or pickup. Having those three things ready speeds everything up considerably.
Holiday weeks
Thanksgiving and Christmas are a different animal. The kitchen runs at full capacity and lead times stretch. Thanksgiving catering orders close the Friday before the holiday at 5 p.m. Christmas orders close December 18. If you're planning a holiday party, earlier is always better — a few of our regular accounts book their December spread in October.
A quick note on "business days"
We're closed Mondays, so when Paul says five business days, Monday doesn't count. Tuesday through Saturday all do, but Saturday orders placed after 5 p.m. roll to Tuesday. When in doubt, add a day of buffer and you'll sleep better.
